Snickerdoodles: what a funny name for a delicious, easy cookie. I was an adult before I ever ate one of these treats, not sure how that happened, but I am hooked now. When my son brings friends home from college these disappear fast and because they are so easy, making more is a snap, but in truth “more is never enough!” I love these warm out of the oven while they are soft. Some folks prefer a crisper cookie so bake them according to your preference. This is an easy recipe and I usually have all the ingredients for those last minute requests.
Ingredients: (makes about 4 dozen depending on the size)
- 1 Cup Butter
- 1 ½ cups sugar
- 2 Eggs
- 2 ¾ Cups all purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons cinnamon & 2 Tablespoons sugar mixed together in a small bowl.
Preheat oven to 350 degrees. Cream butter, eggs and 1 ½ cups sugar, together. Mix together flour, salt, cream of tartar and baking soda. Combine flour mixture with the butter mixture.
Roll mixture into small round balls, I use a melon scooper to make the process much easier. Roll the balls in the cinnamon & sugar mix. Bake on an ungreased cookie sheet for 8 to 10 minutes, light golden but still soft.
