Brats and Beer

I can’t think of anything grilled that goes better than Brats and Beer. A good friend of mine from Wisconsin showed me how they do it in Packer land several years ago, and anytime I’m tailgating, you can bet that I’m cooking Brats this way.
Here’s what you’ll need:

2 lbs of fresh Bratwurst
3-4 Sweet Onions (sliced)
24 oz of Miller Lite
8 Split French Rolls or Hot dog buns
Spicy Mustard for dressing

Directions:

To grill brats you need a two zone fire.  One side needs to be medium high and the other needs to be low.  On the low side place an aluminum roasting pan on the grate and pour in the beer.  Slice the onions and place in the beer bath along with the Brats.  You want the liquid to come to a slow simmer.   After the brats have simmered for about 20 minutes it’s time to grill them.  Place each one on the Med. High side and brown all sides.  It only takes a few minutes on each side and they’re done.  Make sure you don’t poke the brat or you’ll let the juices escape and they’ll dry out.   Remove the onion slices from the beer bath and spread them out on a vegetable grilling pan.  Sprinkle with a little salt, black pepper, and garlic powder and cook until they caramelize.
To serve, place each brat inside a French roll and top with the caramelized onions.  Squirt on a little Spicy Mustard and enjoy.  Make sure to have plenty of ice cold Miller Lite on hand to wash it all down!
