One of my favorite appetizers to cook on the grill is Bacon Wrapped Jalapeno’s. It’s an easy dish to prepare that is sure to please any guest. Some people are afraid of the heat from jalapenos, but you can easily tone it down with a little know how. Here’s how I prepare them:
1 dozen fresh jalapenos
8oz Cream Cheese
1lb of Apple Wood Smoked Sliced Bacon
2oz Killer Hogs – The BBQ RUB.
2 TBS your favorite BBQ sauce
Rinse the jalapenos under cool water and split in half length wise. To take the heat out of these peppers use a paring knife and carefully remove the seeds and veins. This is where the jalapeno gets their heat. By removing it, you’ll have a mild sweet pepper that’s delicious when grilled.
Next, place the cream cheese in a mixing bowl and let it come to room temperature. Add the BBQ sauce and the dry rub and mix thoroughly. Stuff each pepper half with a teaspoon of cream cheese mixture and wrap with ½ slice of the bacon. Use a toothpick to secure the bacon. Grill the peppers over medium heat turning occasionally until the bacon is a golden brown. Allow them to cool for a few minutes before serving.
